The Foundation of Our Bakery

Our bakery in Bucharest, Romania, was established under the guidance of Rav Mordechai Fein and adheres to the strict oversight of Kedassia. Every step is slow and deliberate to ensure precision and care.

Dough Preparation

Our skilled bakers knead the dough with focus and rhythm until it’s perfectly smooth. It’s then carefully shaped and passed along only when hands are free, ensuring no delays. Each piece is perforated individually and swiftly moved to the oven in mere seconds.

Rigorous Cleaning Standards

We maintain impeccable cleanliness: bowls, tables, and tools are thoroughly washed every 18 minutes using a dual-table system. During breaks, the dough handler switches to a fresh bowl, gloves, and apron. The perforating tool is sanitized and cooled in a freezer between each batch.

Baking Process

Two dedicated workers manage the oven—one places the matzoh inside, while the other removes it. Each piece is baked individually, never overlapping, and inspected by an overseer after cooling to ensure perfection.
